Hello, I've seen that Adafruit has a bunch of 7" displays with touch support and HDMI interface. Can you recommend one that supports Windows 7?

The others won't. They use a TFP401 HDMI decoder, and that isn't compatible with DRM'd HDMI streams. Windows uses DRM'd HDMI, so those just aren't compatible.
