I am in the process of converting a full-size standing arcade cabinet into an emulation machine, but I have never dealt with CRT screens like this before.
The CRT itself seems to have a hardwired green/red/blue signal going to it (with three colored wires)
Any info on how to drive this from either an analog source or some kind of hdmi adapter would be really helpful.
Can anyone point me in the direction of some good reading material on arcade CRT monitors?
I can take some pictures if it would help identify what I would need.

The safest and smartest thing you can do is find an old TV repairman any ply (usually) him with a combination of his favorite beverage and time to listen to his stories. It's usually worth more than the price of admission.
CRTs are nasty beasts.. the electron guns operate around 1500v or more, and the tube is essentially a vacuum-packed bomb laced with toxic materials. There are lots of ways to inadvertently kill or injure yourself with one, many of which would require HAZMAT cleanup these days.
You can find old service manuals online, but you really want the assistance of someone who can identify the parts of an unknown system at sight. There's also a whole body of operational knowledge that was never really written down and isn't taught any more.. how tubes behave when they're working well, and the symptoms of various problems.
