The description on https://www.adafruit.com/product/2524 says you should use a heat sink? Can anyone recommend a good heat sink for this unit?

I can't seem to find one sold here for that. maybe I missed it. Here is one that should work well:

That LED design was/is called Luxeon Star. They developed that size and shape. You might search using those words, or at least "star" and maybe you can find some that way.

9 watts is a lot. It depends on the specifics, how many watts, ambient temp, thermal coupling from the semiconductor all the way to the heatsink, what temperature you want to keep the emitter below. Either you need to crunch a lot of numbers or you need to use trial and error. No matter what you come up with it won't be tiny.
