I bought a 1" knob from Adafruit (https://www.adafruit.com/product/2056). It has a tiny hole in the side to presumably tighten a screw to keep it on the pot's shaft. Does anybody know what size/type of screw driver I need to tighten it? Everything I have is WAY to big. It looks like it's around 1mm to 2mm.

I don't have one on hand, but it's probably a 1/32" opening. They exist, but can be kind of hard to find in hex key sets.
Check around for interchangeable screwdriver sets like this:

Those often have a set of small hex bits.

I picked up a small screwdriver set like you suggested. Turns out the size I needed was 2mm.
