NEW to IoT. What should I buy to build something that monito

I want to start building things with an Arduino or a Raspberry Pi. I haven't used one for 15 years. I write web applications and I'm pretty confident on that side of things - but I'm a total novice in this realm. For my first project - this is what I was thinking:

I have this rehearsal studio - and I wanted to try and map my neighbors' schedules. I was thinking about putting some piezo mic on the wall or something - and then catalog the times of day when they are playing - so I can map out a schedule. (Just trying to think of a practical project).

So, what should I buy?

Arduino? Raspberry Pi? Something else?

What is a good all-around thing to play with? I want to add an IoT section to my web development course. I don't really care about price differences - so, I'd probably just round up - but do I need 8Gb? What do you suggest??? What should I know? Thanks!
