After reading the sensor data sheet I see it only has a lifespan of 168 hours.

I just want to understand how this applies to the sensor on the PCB board available for purchase. If so is it possible to rebake/reflow as it describes in the datasheet.
I have a feeling this doesn't apply to the sensors once their mounted but I'm unsure

The 'floor life' rating pertains to how long the chip can sit around without protective packaging before being soldered to a board. The optical components of the chip are hydroscopic. And if they are allowed to absorb too much moisture from the surrounding air, that moisture can cause damage when heated to reflow soldering temperatures. The 'rebaking' procedure dries them out again so that they can be safely soldered.
