The Crouzet stepper motors you posted above have a listed phase resistance of 10 ohms. So powered with 12v, they should draw 1.2A per phase which is the maximum continuous rating of the shield. If the motor phase resistance is slightly under-spec or the power supply regulation is slightly over spec, you could be overloading the shield. This is particularly true if you have more than one motor connected.
