Could someone please post a complete shopping list of all items needed for Matrix Portal M4 with 64x64 LED display panel. I'd love to purchased all parts needed in single order.

The basics are a MatrixPortal M4, a 64x64 panel (your choice of 2mm, 2.5mm, or 3mm pitch), and a USB-C cable to connect to your computer. You can add a USB-C power supply if you don't want it connected to your computer all the time, https://www.adafruit.com/product/1994 will work with the above mentioned cable, or a P4 power supply https://www.adafruit.com/product/4298. You can add a diffuser if desired. https://www.adafruit.com/product/4594.
That covers the basics. You can add other sensors as required for you project(s); the MatrixPortal has analog/digital connections as well as I2C on a stemma-QT connector.

Just a USB-C to connect to a computer to power it and/or program it. The MatrixPortal plugs directly into the back of the matrix panel, or you can use the ribbon cable included with the panel and some long header pins to use it to connect to the MatrixPortal: see my post on the subject viewtopic.php?f=8&t=193049.
The only "official" way to power it is through the USB connection. As I said, you can get an appropriate wall power supply if you don't want it connected to a computer all the time. There's no battery support but a USB power bank might work (I have no idea how long or how well.. LEDs are hungry).
