Hi everyone,
I would like to use the Capacitive Trackpad/Touchpad - Microcontroller-Friendly PS/2 to measure and save touch pressure data. Since I have no experience in electronics, I am wondering which other parts do I need to order to connect the trackpad to a screen. Is there anything else I need apart from from the PS/2 Keyboard+Mouse to USB adapter?
I would highly appreciate any help!

You have to use an Arduino to read the data. There is a link to the Arduino Library and a compatible PS/2 breakout adapter cable in the last paragraph of the product description: https://www.adafruit.com/product/837
To save the touch pressure data, you'll also need a microSD card and microSD card adapter.
