Greetings,
My son wants to build the Super GamePi, we found a local maker to print the case for us as I figured that would be the hardest part to obtain. Now that I am shopping adafruit for the parts list, everything is obsolete or unavailable. I am an intermediate computer user and am not as familiar with these small boards, can I get some suggestions on how to complete this build with modern equivalents.

Chip shortage has made some components difficult to source. You could consider another related project like one of the PiGRRL options:

On the components that are out of stock you can be "notified" when they arrive. On some there are also links to digikey our mouser in case they have stock.

What I specifically need at the moment is the Cupcade Adapter PCB. Is there an equivalent out there, or could I build one?

The Cupcade Adapter PCB is not available through Adafruit. There are PCB files available if you wanted to recreate the adapter.

The Cupcade Micro Arcade Cabinet Kit is the current solution which uses an Adafruit Arcade Bonnet that supports 40-pin Pi's.
