The voice bonnet mics are builtin and not easily bypassed.
There are other i2s / PDM mic breakout boards that you could use with a Pi.

Well darn. I will have to go a different route for my working joe voice changer setup. Now if the pi zero's will ever get back in stock anytime soon...

Make sure you have an alert for the Pi Zero email enabled when in stock. They do appear and sell out quickly.
