Hello! I am looking for a way to be able to connect the Adafruit AS7341 Light/Color Sensor to a power source larger than its rated maximum voltage. I am hoping to be able to use either a 12V battery or a power supply of somewhere between 5 and 12V. Does Adafruit have a power regulator product that could do this or a recommended outside method to accomplish this?

You can use a regulator like this one: https://www.adafruit.com/product/4683
It will take up to 21v input and regulate it down to 3.3v.
