Keep the load cell attached, but disconnect the NAU7802 breakout from the MEGA.
Then make two resistance measurements here:
Resistance between red/black = ?
Resistance between green/white = ?

Resistance between green/white = 5.82 mega ohms
Resistance between green/white = 5.82 mega ohms

The red/black reading is good.
The green/white reading is not. The readings should be nominally the same. There's a broken connection somewhere along that path.
