I am wanting to test using an arbitrary esp32 flashed with the nina firmware with the AdafruitIO mqtt dashboard but I am stuck at the menu where I select my board. Can I just select the basic huzzah or basic feather?
I am using an rp2040 pico to control some other esp32 devices

It sounds like you're using WhipperSnapper, not just AdafruitIO.
I'll ask internally to get the whippersnapper people looking at this.

I had this big long question and explanation typed out but in the process of writing it I was clicking around and answered my own questions...
I think my reason for asking the original question and making the post is based on a lack of knowledge about how to leverage the adafruit platform, and the functions available. I do think having a documentation of other boards that can be flashed with the whippersnapper firmware would be exceptionally useful though. That would certainly drive more users here with the functions you provide via AIO.
