millivolt amplifier
I would like to cause a couple of muffin fans to turn on when a thermostat-controlled, gravity furnace goes on. Is the Adafruit Universal Thermocouple Amplifier MAX31856 suitable for this use? I don't anticipate using a micro controller. Rather, if the amplifier output is less than that required to operate the fans, I would add a relay that will accept the amplifier output and allow control of either a 12V DC or 120V AC external circuit. If the MAX31856 is not suitable, kindly recommend a device that is appropriate for the application.

The MAX31856 is a digital device and requires a microprocessor to configure it and read out the data.
The tiniest Arduino, together with the MAX module, would work and be no more complicated than a millivolt-to-volts amplifier/relay combination.
