Hi,

I´m a Beginner.

I have a Question about the MCP3008. Can i control with a analog Potentiometer the Knobs in Qsynth or similar like that by the Raspberry Pi ??

Maybe? Not fully sure what you're after. The MCP3008 is an ADC. That could be used to read the pot (set it up as a voltage divider). That pot reading is sent to the Pi via SPI. You'd need some kind of interface software that could read the raw ADC value over SPI (the analog pot position) and then feed that into Qsynth in some meaningful way.
