Does anyone know if the SparkFun STEMMA QT / Qwiic Breadboard Breakout Adapter (Product ID: 4527) can be used to connect two JST-SH cables together? For example, connecting two P5037A test hooks to each other or to the alligator-clip version?

Yes. It is just a straight pass-through with some breakout holes.
