Yes you can. You will also need HX711.

You can read a strain gauge with a high-resolution ADC. This tutorial uses the NAU7802:

Does anyone know the K-value for these load cells? Meaning what is the translation multiplication factor from the measurement to an actual load (in kg)?

We don't have any specs for that, but you can calculate it from readings of known masses.
