Hi,
I plan to use a protoboard to connect a standalone esp32 to an RGB Matrix. I only saw instructions for pin connections to Arduino boards on the tutorial https://learn.adafruit.com/32x16-32x32- ... oto-shield. Which pins from the matrix should be connected to which on the esp32. I'll attach schematics of both below.
I'm somewhat new to all this and may have bitten off more than I can chew.

Since you are somewhat new to this I would recommended making a course change.
Using an ESP32 board for WiFi and a 32x64 RGB Matrix can be super easy, but not with the board you are trying to use.
The MatrixPortal would be really easy as it is designed for exactly this.
