Hi,
What is the difference between the 3 products below?
which functions are available, how much current each draws, etc
I will use this with Raspberry Pi Pico W and 2 LiPo 3.7V

The Pimoroni Pico LiPo Power SHIM would be the logical choice to use if you want to power your Pico W with a LiPo. The other two units you linked to are fuel gauges for monitoring battery voltage and charge current.
You will be limited to using a single LiPo pack at a time. Not the two 3.7v you had mentioned.
